Wow! I literally could not stop eating these. Super easy and super moist and delicious. I added pumpkin pie spice to the frosting, but next time, I think I'll use more and put in half applesauce and half oil. Amazing fall treat!
I followed another reviewer's advice and doubled the water and sugar. Once it chilled for an hour or two, I tasted it and it was pretty underwhelming, so I added the juice of another lemon. Much better! I like it tangy. I'll be making this much more often now that it's warmer!

My only adjustments were: margarine instead of shortening, vanilla yogurt instead of milk, and about 2 ounces of freshly squeezed lemon juice instead of lemon extract. Really easy...not to mention dangerous! I could eat both loaves by myself if no one stopped me!
Super! I've used this recipe a few times before but always varied from it. This time, I followed it almost to the T; only changes were thawing the frozen fish in cold water for about 10 minutes and adding several herbs and spices in addition to the salt and pepper (also using lemon pepper instead of regular). It's super quick to cook and the melted butter is the perfect finish! My only suggestion would be to use less than 1/2 cup of flour. It was definitely more than enough. I served this fish with cheesy mac n cheese and sauteed broccoli. A perfect meal!

I've made this several times and always enjoy it, as well as the people I make it for. It's simple but pretty time consuming. My only complaint is it never bakes completely in the middle, making it a mushy, half-baked core. At first I thought it was because of my old oven, but even after I tried adding 10-15 minutes to the baking time, not much improved. Maybe I'm doing something wrong. In any case, I always get compliments on this and my coworkers always ask when I'm making more.
